Everything else in baker's math works the same way, salt, yeast, and oil are all stated against flour weight, which is why recipes written in percentages scale perfectly from one pizza to twenty. Water content shapes texture more than any other single variable. Low hydration doughs, in the 55 to 60 percent range, are firm, easy to handle, and bake into crisper, denser crusts; this is the territory of classic New York slices and many pan styles. The 60 to 65 percent band is the versatile middle where most home recipes live, balancing workability with an open crumb. Push past 70 percent and the dough turns slack and sticky but rewards you with a light, airy, almost ciabatta-like interior, the signature of styles that bake long at moderate heat or fast in very hot ovens.

Here is the nuance beginners miss: the right hydration depends on your flour. Flour proteins and damaged starch absorb water, so a strong bread flour at 13 percent protein drinks noticeably more than a soft all-purpose flour, and whole grain flours drink more still. Two doughs both labeled 65 percent can feel completely different in the hands. The practical path is to start at 62 to 65 percent with whatever flour you use, bake, and take notes. If the crumb feels dense and the crust bakes pale and hard, add two or three points of water next batch. If the dough is unmanageable and pies keep sticking, remove two or three.
