Turning peel

A small, round metal peel used to rotate or reposition a pizza while it bakes inside a very hot oven.

A turning peel is a small peel, often with a round metal head, used to rotate a pizza after it has already been launched and is baking. It is built for quick, precise moves inside a hot oven rather than for carrying a full, topped pizza.

Rotating matters because most high heat ovens, whether wood, gas, or a home broiler setup, do not heat evenly from every angle. Turning the pizza every few seconds in a fast bake keeps one side from charring or burning while the opposite side is still pale, spreading heat exposure evenly across the whole crust.

Look for a small head that fits through a tight oven opening and a long handle that keeps your hand well away from the heat, along with a thin edge that slides cleanly under a partially set crust without tearing it. A common mistake is using a peel that is too large for the oven's opening, or waiting too long between turns in an oven that bakes in under two minutes, by which point one side may already be past the point of no return.
